Savory Pierogi Cake


Serve it hot, it is crispy and golden outside, tender and soft inside, just like a pierogi.
Savory Pierogi Cake


Preheat the oven to 350oF
Grease and flour a square baking pan.

Next, do you have powder or flakes?
If you have flakes, put about 4 cups flakes in the food processor/Vitamix/Blender and process until a fine powder, then out of that powder measure a cup and a half for this recipe.

1-1/2 cup potato powder
1/4 cup tapioca flour
1 t garlic
1 t onion powder
3 t baking powder
1 t salt
1/4 t pepper

Whisk the above together, set aside

3 eggs
1/2 cup milk
2 cups water
1/2 cup melted cooled butter

In a bowl, with a hand mixer, blend the above together, then add

1/3 cup chopped scallions

Then add the potato ,mixture and beat 3 minutes, it will NOT be a batter.

Pour into the pan and pat down and then bake for 50-60 minutes until crispy and golden, brush with butter and cut and serve
