Its got full fruity pepper flavor
Pepper & Jalapeno Cheese Soup
6 Multi Color Peppers (Red, Yellow, Orange), Washed and Sliced.
2 large green peppers or Poblanos, charred, peeled and stemmed and seeded
3 Vidalia Onions, Peeled and Sliced
2-4 large jalapenos, charred, peeled and stemmed and seeded
3 T Olive Oil
3 T Butter
1 t Salt
1/2 t Pepper
1 t Oregano
1-1/2 t Cumin
2 T Franks Hot Sauce
Melt
the butter and oil in a large skillet and add the peppers and onion and
stirfry a few minutes, then add the salt, pepper, cumin and oregano.
Fry till tender and translucent, then add the hot sauce and stir to coat.
Let fry about 3 more minutes...
Put it all in the Vitamix and buzz til smooth
Put in a pot and add
1-1/2 cups shredded White Cheese
2/3rds cup Heavy Cream
Heat up then serve with various toppings, like
Tortilla Chips
Corn
Black Beans
Lime
Taco Meat
Chorizo
Pickled Hoagie Peppers
Pickled Jalapenos
Serve it as a Soup, thinned with broth
A sauce over noodles
or a Queso to dip Chips.
