Swordfish Sloppy Joes
4 Swordfish steaks, baked with oil, butter and simple seafood seasoning, cooled and flaked
1/2 a finely chopped vidalia onion
1/2 a green and red pepper, finely chopped
Fry the peppers and onion, till tender, set aside, make the rest of the sauce
2 Ancho Chilis
2 Guajillo Chilis
Rehydrate the chilis in boiling water, when they are done, puree them with the following
2 T Soy Sauce
1 T Worcestershire sauce
1 T Tomato paste
1 T lime juice
1 t oregano
3 cloves garlic
1 t cumin
salt & pepper
1/4-1/3 cup Honey
1/4 cup Vinegar
1-2 T Franks Hot Sauce
3 T Olive Oil
Mix the peppers and onions with the sauce and then mix with the flaked Swordfish and serve on toasted hamburger buns
