Breakfast Pot Roast
1 3 pound pork Roast
Breakfast Sausage Seasoning (I love Backwoods brand)
1/2 cup pure maple syrup
1 onion, sliced
red pepper flakes (optional)
Salt and pepper
The night before you serve this, sear the meat all over in a frypan in a few tablespoons oil. coat the meat all over with sausage seasoning, then put in the Instant Pot, with the onion, the syrup, 2 T sausage seasoning and water
Slow cook on high, for 7-8 hours.
Remove to a plate and slice.
Thicken 3-4 cups of the pot liquor with Wondra flour or Corn starch and serve as gravy.
Also, boil 5 large or 10 medium new potatoes (1-1/2 lb) in their skins for about 10 minutes, peel, then refrigerate overnight

the Potatoes,cooked grated
1 large onion grated
6 strips cooked bacon, crumbled
2 eggs
1/4 cup flour
1 t Salt
1/2 t Pepper
2 T Butter
2 T Oil
Mix all the ingredients together but the butter and oil
Heat a pan with the butter and oil over medium, pat the potato mixture into the pan and cover and cook until the bottom is browned then flip.
Test the center with an instant thermometer and assure its 150 or higher,
Cook, covered till its golden on the second side, slide out onto a plate and serve
Serve with extra Syrup if desired
