White Pumpkin Bread
1/2 cup butter, room temp
2 cups sugar
3 T eggwhite powder
2 -1/2 cups cooked white pumpkin puree
2/3 cup Pumpkin Spice Coffee Creamer
1 T White Food Color (optional)
3-1/2 cups flour
1/2 t baking soda
1 T baking powder
1 t salt
1/3 cup pepitos
1/3 cup craisins
1/3 cup roasted pecans
Preheat the oven to 350oF.
Grease two loaf pans
Puree the Butter, sugar, eggwhites, pumpkin and coffee creamer in a blender
In a big bowl whisk the flour, baking soda and powder and salt together, then stir in the pumpkin mixture.
Then fold in the nuts, craisins and pepitos.
Divide the mixture between the pans.
Bake for 30 mins to 1-1/2 hours (depending upon your pan) until a toothpick comes out clean..
Cool 10 mins before slicing
Or you can steam BOTH cakes in a large steamer to make them stay a pristine white.
