Black Bean Anko
1/2 pound black beans
1 t cinnamon
1 cup sugarSoak the beans in plenty of water overnight.
Drain and put into a pressure cooker and cover with water and the cinnamon
and cook for 10 whistles.
After the pressure goes down, open and mash the beans thoroughly, using a potato masher or an immersion blender.
Add the sugar, it will become liquidy a bit, but as it cools it will thicken back up.
Corn Mochi
1-1/2 cup yellow masa
1/2 cup mochiko
3/4 cup sugar
1-1/2 cup boiling water
Roast the masa in a frying pan over high heat, stirring constantly until its taken on some color and it smells fragrant. Pour onto a plate to cool.
Then combine all ingredients in a bowl and put on rubber gloves and knead it till its well combined. place in the microwave and cook 3 mins on high, stir
It should be the texture of well kneaded PlayDoh, if not put back in the microwave for 1-2 mins more.
Then pour some extra mochiko on a work surface and put half of the Dough on it and dust with more mochiko and with your hands press it into a thin sheet, like this
Pick up a square and brush off the majority of the mochiko and spoon a ball of the Anko onto the square and pinch up the edges and seal and pinch off the excess.
Eat.
