Foraging #8: Stir Fried Fresh Bamboo Shoots
Almost all Bamboo species' shoots are edible.
Some are so large you need to slice them in those familiar planks that you get in cans.
Others, like the ornamental neighborhood bamboos, are pencil like and pretty
If you have a thicket of ornamelntal bamboo in your neighborhood or property, look at the ground around the bamboo for spike like shoots like these (There are 2 in this pic BTW)
And pick them carefully as close to the ground as possible, Pick as many as you can, then bring them in and wash thoroughly in FIT produce spray and a few rinses of cold water and if you arent gonna consume at that time, place them in a bag in he fridge.

If you are gonna eat them,
Carefully peel each grey layer, one by one until you get to the tender cream colored shoots.
Slice lengthwise and cook in your fave dish.
This is what fresh, cleaned prepared bamboo shoots look like
Heres the recipe for the pork stirfry above
Sauce
1 cup Coconut Water
1 one inch piece of fresh ginger
2 cloves garlic
2 T minced onion
2 T soy sauce
1 t chicken stock powder
1 to 2 T potato starch
2 T honey
Squirt Sriracha
1 T Vinegar
2 T sesame oil
2 T Xiaochen Wine
Place all in a blender and blend on high tll smooth
Ingredients
1/2 pound, pork loin strips coated in potato starch (this is called VELVETTING)
1 medium onion sliced
1/2 green pepper sliced
1/2 red pepper sliced
1/2 cup bean sprouts
1 cup asst mushrooms
1/3 cup sliced scallions
Prepared fresh Bamboo Shoots
Fry the velveted pork in light oil till broun
Remove to a plate then add some sesame oil and add all the veggies and stir fry till crisp tender, re-add the pork and then add some sauce, stir, if its not enough for you add more (you just want a light coating and you will not use it all). Let simmer a few minutes, Serve.
