I made this dish cause I wanted a
vehicle for a Mexican Alfredo sauce and Poblanos, and the only way to
make pasta that TASTED like corn was to use pulverized FRITOS.

Frito Fettuccine with Poblano Alfredo
2-3 Eggs (it really depends upon how you measure flour)

1-1/2 Cup Flour
1/2 cup Pulverized FRITOS, pulverized in the Vitamix
1 teaspoon of salt
Water and oil to adjust for humidity and ingredients
1/2 cup Pulverized FRITOS, pulverized in the Vitamix

Put all ingredients in a Pasta maker and process for Fettuccine
Or put all ingredients in a food processor and process till it forms a ball,.
Knead a few minutes then wrap in plastic wrap and let sit for 30 minutes. Roll out on table with flour
then fold several times like this
Then slice into Fettuccine and fluff
Drop into salted boiling water and cook till tender (5-8 mins)
Sauce
1 T butter
1/2 cup cream
1 cup milk
1 T Taco Seasoning
3/4 cup Mexican cheese or Taco blend
1/4 cup Parmesan Cheese
Clove Garlic minced
Clove Garlic minced
Black Pepper
1 teaspoon salt
Fry the garlic in the butter briefly, then add the Taco Seasoning, then add the milk, cream and cheese and simmer gently for 4 minutes, add salt and pepper
Drain Pasta, immediately toss with
Charred, deskinned, deseeded poblano pepper strips, and then the sauce
Sprinkle with
Grated Pepper Jack Cheese & Diced Red Pepper
It tastes like Fritos!!!!!!!!
