Chicken Fried Rice
1 pound Boars Head Golden Classic Deli Chicken (ask them for a CHUNK piece) or cooked chicken
breasts.
1 cup short grain rice, uncooked
1 Package frozen brocolli florets, half cooked or
2 medium heads bok-choy chopped
3 eggs
2 T veg oil
Dark Sesame oil
Salt and FG pepper
And 3 envelopes of NAGATANI-En crab or shrimp flavor fried rice seasoning mix (from most Oriental grocers, its the pink or green package, do not use a supermarket brand it aint the same) http://www.katagiri.com/ctlg/jpgf/i/i043.htm
Cook the rice in your rice cooker with 2 cups water on the WHITE RICE setting or put the rice in a
micro-safe large bowl, add 2 cups water, cook on high 5 mins, then 50% for 20 minutes. Meanwhile,
dice the chicken, Put the oil in a large pre-heated fry pan, add the chicken, season with s&p, fry till
it takes on a lil color, (if using bok choy add it now and cover til it wilts) or add brocolli and
toss, push to one side, add the eggs to clear area and scramble and cook til done and break up into
smaller pieces, bring all together, stir fry about 2 minutes, add the rice and stir fry about 2 minutes
add seasoning mix, stir thoroughly, pour a few swirls of sesame oil over all, stir heat thru,
serve.
I sprinkle mine with Hot Sesame Chili Oil.
